Hohberger Caramel Systems are usually incorporated after our Batching and Dissolving Systems, which first measure and dissolve the caramel slurry, pre-heating and mixing it before transfer to a heated surge tank. An operator command then automatically transfers the syrup into an all stainless steel, scraped surface heat exchanger for final evaporation.

A 3-HP, variable speed gear motor drives the internal scraping system in this evaporator. The syrup is forced through a small annular space with steam jacketing on either diameter. This process assures swift and uniform product evaporation.

The evaporated product gravity feeds into a scraped surface, steam jacketed caramelizing tank. It re-circulates again from the bottom of the tank to the top, blending with the incoming caramel. This proven technique effectively hastens the final color development and improves product homogeneity. At the appropriate color and level, the 3-way discharge valve directs the product to further downstream processing including flavor addition, drum cooling or depositing.
