Latini-Hohberger Dhimantec continuous vacuum cookers are designed to continuously produce low moisture hard candy and are ideally suited for the production of sugar free candies. The optional cooling wheel that can be provided with this machinery allows the continuously discharged candy to be cooled to suitable temperatures prior to being handled by an operator. This rapid cooling is particularly effective in the production of sugar free candies where the discharging stream of candy is very fluid and can reach dangerously high temperatures of up to 350 F (174 C). |
